Edible flowers are regaining popularity as therapeutic agents, due to their phytochemical composition. The present study assessed the recovery of phenolics along with the antioxidant and anti-inflammatory properties of seven edible flowers of the Fabaceae family after being subjected to simulated gastrointestinal conditions and dialysis. The total phenolic content of all the flowers decreased after the gastric phase, whereas the total flavonoid content increased.

Edible flowers have been in traditional cuisine and phytotherapy for centuries. Recently, the consumption of edible flowers has increased significantly as the phytochemicals in them are known to have numerous health benefits. Information on nutraceutical potentials and health benefits of the phytochemicals available in different varieties of edible flowers and their uses are discussed.
