The oil from the heterotroph Schizochytrium is a rich source of n-3 PUFA, particularly DHA, and therefore highly susceptible to oxidation. The present work reports the first application of coaxial prilling for the protection of this oil through microencapsulation. After process optimization, core-shell microparticles were produced with calcium or zinc alginate at different concentrations.

Ultrasonication-assisted enzymatic treatments using Viscozyme®, Alcalase®, and feruloyl esterase were applied to recover proteins, avenanthramides, phenolic acids, free sugars, and organic acids from oat hulls (OH). The profiles of the chemical compounds in OH were markedly influenced by the nature of enzymes, ultrasonication frequency, and processing time. A significant increase in the contents of proteins and phenolic acids was observed in the liquid fraction of all enzymatic treatments, which was 2-19 folds higher than those detected in untreated OH.

Omega-3 fatty acids such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are essential for human health but prone to oxidation. While esterification location is known to influence the stability of omega-3 in triacylglycerols (TAGs) in oxidation trials, their oxidative behavior in the gastrointestinal tract is unknown. Synthesized ABA- and AAB-type TAGs containing DHA and EPA were submitted to static digestion for the first time.

Article Synopsis
  • Triterpenoids are important bioactive compounds found in Chaga, a medicinal fungus, and were extracted using supercritical CO2 and a modified Folch method.
  • Six triterpenoids were identified and quantified, with inotodiol being the most abundant in both extraction methods.
  • Supercritical fluid extraction (SFE) provided a 56% higher recovery of triterpenoids compared to the Folch method at optimal conditions, showcasing its advantages like faster extraction time and lower environmental impact.

The polysaccharides of the sterile conk of (Chaga) have demonstrated multiple bioactivities. The mycelium of this basidiomycete, obtained after submerged cultivation, has been considered a feasible alternative to the sterile conk for the production of polysaccharides. However, previous research has paid little attention to the differences in the structures of polymers obtained from the different resources.

Craterellus tubaeformis (Funnel Chanterelle) is among the most abundant wild mushrooms in Finland. Three polysaccharide fractions were sequentially extracted from the fruiting bodies of C. tubaeformis, using hot water, 2% and 25% KOH solutions, respectively, and purified.
