This study evaluated the nutritional profile and fiber content of innovative formulations of wheat-based biscuits enriched with chia seeds, carob flour and coconut sugar. The antioxidant, cytotoxic, anti-inflammatory and antimicrobial activities were also investigated to understand the potential health advantages of the incorporation of these new ingredients. The novel biscuits demonstrated significant improvements in protein and mineral content, with increases of 50% and 100% in chia biscuits, and up to 20% and 40% in carob biscuits, respectively.

During the university period, many students adopt new dietary patterns, sometimes including the excessive consumption of highly processed foods, which can expose them to process contaminants such as acrylamide. This research aimed to evaluate the dietary exposure to acrylamide of Spanish university students in their campus canteens using the duplicate diet method, and to estimate the associated health risks based on their food consumption habits. The consumption of energy drinks (EDs) is increasing globally while the evidence and concern about the potential health risks are also growing. A mechanistic study was carried out on the optimal methods of fabrication of products containing higher loads of thermochromic VO(M1) fabricated by thermal treatments of V nanoparticles in air, that, once achieved, are more stable than other commercial products upon natural aging or reiterated reheating. At the best temperatures for single runs, 55% of VO can be attained by the reactions of a limited number of the species initially formed in a process, that, if not stopped, can degrade the product by solid state reactions of oxidations and reductions without O consumption. This fact supports the use of two-step treatments at lower temperatures and faster cooling rates that reach 65% of VO; such reactions should, ideally, take place in the 550-625 °C temperature range.

In this work, a simple, fast and dry method for the fabrication of a thermochromic product with a high load of VO (M1) consisting of the controlled heat treatment of pure vanadium nanoparticles in air is presented. After a complete design of experiments, it is concluded that the most direct way to attain the maximum transformation of V into VO (M1) consists of one cycle with a fast heating ramp of 42 °C s , followed by keeping 700 °C for 530-600 seconds, and a subsequent cooling at 0.05 °C s .

In 2019, the European Commission recommended monitoring the presence of acrylamide in certain foods not included in Regulation 2158/2017, to consider other sources of exposure to the contaminant. In the present study, eleven groups of processed foods commonly consumed in Spain were classified, according to their food matrix, into potato-based food, cereal-based food and food based on cereal mixed with meat, fish or vegetables. Two observational tests were designed to investigate the influence of consumer decisions during the preparation of French fries from fresh potatoes on acrylamide formation. In both tests, color was of paramount importance to volunteers with regards to the decision to stop the frying process.
