Consumption of whole milk and related dairy products has decreased considerably as a result of negative aspects associated with the consumption of saturated fats. The main difference between the composition of goat milk and cow milk concerns the composition of the fat, that of goat milk containing a larger proportion of medium-chain triglycerides. The metabolic utilization of these compounds is fundamentally oriented towards their use as sources of energy, and they may even contribute to the synthesis of proteins.

A study was carried out to analyse the production and composition of milk from Malagueña goats of different genotypes for the content of alpha s1-casein. Twenty goats were used, half of them with a high (HG) and half with a low (LG) genetic capability for alpha s1-casein synthesis. Among the ten HG goats, seven had BB and three had AB genotypes, whereas there were seven EF and three FF genotypes among the LG goats.
