Article Synopsis
  • * Fourteen minerals and toxic elements were analyzed in the vegetables, with calcium being the most abundant essential element and lead being the highest among the toxic elements observed.
  • * The combined treatment of ozone and benzalkonium chloride was found to be the most effective in minimizing bacterial contamination and also resulted in better sensory scores for taste and quality compared to other treatments.

This research examines the concentration of 10 trace elements including arsenic (As), lead (Pb), chromium (Cr), zinc (Zn), iron (Fe), cobalt (Co), cadmium (Cd), nickel (Ni), manganese (Mn), and aluminum (Al) from among 36 different samples of coffee (3 brands and 2 types of simple and instant) and mixed coffee (3 brands and 4 types of simple, creamy, chocolate and sugar free) collected from market of Iran's and analyzed by using ICP-OES (inductively coupled plasma-optical emission spectrometry). The recovery, limit of quantification (LOQ), and limit of detection (LOD) ranged from 93.4 to 103.

Polychlorinated biphenyls (PCBs) are harmful chemicals that are persistent in the environment and can accumulate in the food chain. The purpose of the present research was to assess non-dioxin-like polychlorinated biphenyls (NDL-PCBs) in some dairy products (yogurt, doogh, and kashk) using modified QuEChERS (Quick, Easy, Cheap, Effective, Rugged, and Safe) technique and gas chromatography-triple-quadrupole mass spectrometry (GC-QqQ-MS/MS) method and risk assessment study. The LOQs (limit of quantifications), LODs (limit of detections), recovery, and RSD for the PCB analytes were 0.

The objective of the present study was to investigate the level of 16 PAHs in fruit juice samples (orange, apple, peach, pineapple, and mango) with three different packages (PET bottle, Tetra Pak, and canned packaging) by using MSPE/GC-MS (magnetic solid-phase extraction and gas chromatography-mass spectrometry) method. In this method limit of detection (LOD), and limit of quantitation (LOQ), and recovery were 0.030-0.

Unlabelled: The aim of this study was to compare the antioxidant potential of the yogurt and kefir produced from ewe, camel, goat, and cow milk. The antioxidant activity of the samples was assessed by measuring total phenolic content (TPC), 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging activity, ferric reducing antioxidant power (FRAP) and 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulfonic acid) (ABTS) radical reducing capacity during 20-day storage at 4 ºC. Kefir and yogurt prepared from ewe and camel milk had significantly higher antioxidative potential than samples made from goat and cow milk (P < 0.

This study aimed at to formulate a food-grade nanoemulsion of tarragon essential oil (NEO) and investigate its antioxidant and antimicrobial properties. Oil in water NEO was formed by blending 10% of tarragon EO (TEO), 85% water, and a mixture of 5% surfactants, then antioxidant and antimicrobial activities were evaluated. The main components of TEO were estragole, beta--ocimene, beta--ocimene, and l-limonene.
