A spectrofluorimetric procedure using 4-methylumbelliferyl esters as substrates was developed for the determination of lipase activity in foods. It was tested with among others whey and egg powders, almonds, pepper, paprika and cinnamon. In addition, some lipase preparations of microbial origin were analyzed.

Micro-organisms were isolated from several harvest crops and identified. Their capacity of breaking down pesticides frequently applied over large areas was investigated. It was found that some types of molds regularly found on untreated foodstuffs of vegetable origin have changed in composition and germ density during the last 5 to 10 years and that they are capable of more or less breaking down pesticides only to a limited extent.

Typical characteristics of the wheat types Kranich, Kormoran, Kolibri, Diplomat, Benno, Huntsman were worked out and a method for their fast estimation was developed. The characteristics of the different types were drawn in lines. Their usefulness for the estimation of wheat types out of a grain mixture of pure wheat types of unknown age and origin were successfully tested.

Sixteen fungi and fife bacteria were isolated from soya beans and their species were determined. The microorganisms were cultivated on soya flour agar plates sterilized by heat. After addition of an enriched lipoxigenase preparation the growth was followed.
