Article Synopsis
  • The study aimed to develop quantitative models for predicting the growth of the spoilage bacterium Alicyclobacillus acidoterrestris in fruit drinks, focusing on interactions of temperature and pH.
  • A growth/no growth interface model was created, demonstrating accurate predictions for A. acidoterrestris growth based on temperature and pH, confirmed by a high concordance index and satisfactory goodness of fit.
  • Additionally, the study examined the growth rate of A. acidoterrestris in varying temperatures and pH levels, validating the developed models against real data from commercial pasteurized fruit drinks, which showed effective prediction of bacterial growth under different conditions.

The effect of storage temperature (0-40 °C) and inoculum size (10¹-10⁵ spores) on the mycelium growth kinetics of 12 fungal species on yogurt were monitored. A cardinal model with inflection (CMI) was used to describe the effect of temperature on the growth rate (μ) and the lag time (λ) of each isolate. Significant differences on the temperature dependence of the mycelium growth between the tested species were observed.
