Photocatalysis has attracted more and more attention as a possible solution to environmental, water, and energy crises. Although some photocatalytic materials have already proven to perform well, there are still some problems that should be solved for the broad commercialization of photocatalysis-based technologies. We assessed the viability of various probiotic strains during ice cream production and storage, focusing on their potential to reach the gut, and evaluated overall antioxidant activity using 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), ferric reducing antioxidant power (FRAP), and total polyphenol content (TPC) assays. The incorporation of fermented white bean homogenate significantly increased antioxidant capacity compared to the control group.

The reaction was performed in the presence of Eosin Y as a photocatalyst. The key parameters responsible for the success of the described strategy are visible light, a small amount of photoredox catalyst, an anhydrous solvent, and an inert atmosphere.
