Dietary selenium (Se) supplementation was tested on the muscle antioxidant enzymes SOD, CAT, and GPX, as well as on superoxide anion levels in shrimp exposed to nitrite.
Results indicated that Se supplementation improved shrimp's ability to withstand low levels of nitrite, suggesting that selenium acts as an antioxidant.
Additionally, organic forms of Se were found to be more beneficial than inorganic forms in enhancing this resistance.
