Heat-induced conversion of gingerols to shogaols in ginger as affected by heat type (dry or moist heat), sample type (fresh or dried), temperature and time.

The impact of heat type, sample type, temperature and time on the heat-induced conversion of gingerols to shogaols in ginger were studied by an UHPLC-ESI-MS/MS. Heat treatments greatly induced the conversion of gingerols to shogaols in ginger. As the temperature increased, the faster conversion of gingerols into shogaols were observed.

Protective effect of gallic acid on the thermal oxidation of corn and soybean oils during high temperature heating.

The comparative protective effects of gallic acid with well-known synthetic antioxidants (tert-butylhydroquinone, butylated hydroxylanisole, propylgallate) on the thermal oxidations of corn and soybean oils during heating for 8 h at 180°C were studied. The quantitative effects of gallic acid at three different concentrations on the time-course thermal oxidations in the two different vegetable oils were also studied for a prolonged heating of 6 days at 180°C. Gallic acid at 200 ppm exhibited higher protective activity than the synthetic antioxidants at the same concentration.

Collaborate and share: an experimental study of the effects of task and reward interdependencies in online games.

Today millions of players interact with one another in online games, especially massively multiplayer online role-playing games (MMORPGs). These games promote interaction among players by offering interdependency features, but to date few studies have asked what interdependency design factors of MMORPGs make them fun for players, produce experiences of flow, or enhance player performance. In this study, we focused on two game design features: task and reward interdependency.

Why people continue to play online games: in search of critical design factors to increase customer loyalty to online contents.

As people increasingly play online games, numerous new features have been proposed to increase players' log-on time at online gaming sites. However, few studies have investigated why people continue to play certain online games or which design features are most closely related to the amount of time spent by players at particular online gaming sites. This study proposes a theoretical model using the concepts of customer loyalty, flow, personal interaction, and social interaction to explain why people continue to play online network games.
