Article Synopsis
  • The study evaluated various colored cherry tomato cultivars ('Jocheong', 'BN Satnolang', 'Gold Chance', 'Black Q', and 'Snacktom') for their firmness, taste, and nutritional metabolites at ripening stage.
  • Findings showed distinct taste variations and metabolite accumulation linked to the tomato colors: 'Black Q' is rich in chlorophylls and anthocyanins, 'Snacktom' in lycopene, 'Gold Chance' in phenolics, and 'Jocheong' in vitamins and amino acids.
  • 'Gold Chance' had the highest antioxidant capacity, highlighting the potential for breeding programs aimed at enhancing nutritional content through diverse cherry tomato selections.

This study was conducted to assess the physicochemical changes and overall nutritional implications of greenhouse-grown "TY Megaton" and "Yureka" tomato cultivars under on-vine and postharvest ripening conditions. In the first group, tomatoes were harvested from a vine at the breaker, pink, and red ripening stages and sampled immediately. The second group was harvested at the breaker stage and allowed to ripen under room conditions to the pink and red stages based on color values, similar to the vine-ripened samples.
