Garlic-based extracts have been surveyed as healthy promoting supplements in relation to their content of organosulfur compounds. The present study investigated the effect of high pressure extraction and maceration, and four extraction solvents (three hydroalcoholic mixtures and sunflower oil) on the total and relative amounts of the main organosulfur compounds of clove and stem extracts of the Italian ecotype "Aglio Rosso di Sulmona" (Sulmona Red Garlic). Methods: A convenience sample of 344 subjects (females = 207; males = 137) was recruited.
Increasing evidence supports the anti-inflammatory role of estrogens in Multiple Sclerosis (MS), originating from the observation of reduction in relapse rates among women with MS during pregnancy, but the molecular mechanisms are still not completely understood. Using an integrative data analysis, we identified T helper (Th) 17 and T regulatory (Treg) cell-type-specific regulatory regions (CSR) regulated by estrogen receptor alpha (ERα). These CSRs were validated in polarized Th17 from healthy donors (HD) and in peripheral blood mononuclear cells, Th17 and Treg cells from relapsing remitting (RR) MS patients and HD during pregnancy.

The present trend to associate traditional foods crops with health-promoting properties suggested to investigate the degradation kinetic of three Brassica oleracea landraces' phytochemicals subjected to boiling, steaming and stir-frying.
Results: Boiling led to substantial losses due to leaching.
Foods are complex matrices containing many different compounds, all of which contribute to the overall effect of the food itself, although they have different mechanisms of action. While evaluating the effect of bioactive compounds, it is important to consider that the use of a single compound can hide the effects of the other molecules that can act synergistically or antagonistically in the same food. Background concepts were (1) the available traditional foods definitions; (2) the theoretical background of food quality perceptions; and (3) the different levels of food functions.
Methods: Field investigations were carried out by face-to-face in-depth qualitative interviews with local stakeholders, in the Black Sea region and Italy, on all aspects of traditional food production chains: raw materials, products, processes and perceptions.
Background: The nutritional characteristics of the Black Sea area (BSA) traditional foods are almost unknown, and they could be interesting sources of antioxidant compounds. In this study, carried out within the BaSeFood project, the in vitro total antioxidant capacity (TAC) and phenolic content of 39 BSA traditional foods were determined using different assays.
Results: An ample range of TAC and phenolics content was detected in the examined foods that were ranked according to their scavenging activity expressed per weight unit and per serving size.
