Use of wild Lactobacillus strains in an adjunct culture for a Roncal-type cheese.

The effect of an added adjunct culture consisting of facultatively heterofermentative lactobacilli (FHL) on the volatile compounds and sensory characteristics of a Spanish ewes'-milk cheese was examined.
