This study investigated the use of seed extract from Moringa oleifera Lamark (MO) for both clarifying the sugarcane juice and removing fermentation contaminants that originated during the 24 h storage of the freshly cut stalks. The addition of the MO seed extract during the juice clarification step decreased the total microbial population by 41.66% compared to the other treatments.

During alcoholic fermentation, most of the substrates supplied to the yeasts are converted into ethanol and carbon dioxide generating energy for cell maintenance. However, some of these substrates end up being diverted to other metabolic pathways generating by-products reducing the yield in ethanol production. Glycerol is the most important by-product quantitatively, and its production during fermentation is associated to the production of ethanol.

One of the most important steps is to clarify the juice, which are added synthetic polymer acrylamide base, aiming the fast settling of impurities present in the juice. However, this input is expensive and may have carcinogenic and neurotoxic actions to humans. The search for new natural flocculants that have similarity with the commercial product is of great value.
