Structural characterization and emulsifying properties of polysaccharides of Acacia mearnsii de Wild gum.

Polysaccharides (GNF) from Acacia mearnsii de Wild gum exudates, collected from trees growing in the south of Brazil, were characterized ((13)C and HSQC NMR, GC-MS, colorimetric assays).
