Chitosans are promising multi-functional biomolecules for various applications whose performance is dependent on three key structural parameters, including the pattern of acetylation (PA). To date, chitin deacetylases (CDAs) are the only tool to control the PA of chitosan polymers via their specific mode of action during de- or N-acetylation. For a start, this review summarizes the current state of research on the classification of carbohydrate esterase 4 enzymes, the features in sequence and structure of CDAs, and the different PAs produced by different CDAs during de- or N-acetylation.

The present study evaluated the effects of supplementing VM in grazing cattle during the rearing phase on performance and carcass quality of beef cattle in the finishing phase. Two experiments with a randomized block design were conducted in consecutive years to contrast two post-weaning supplementation strategies using VM at 45 mg/100 kg body weight (BW). Rheumatoid arthritis (RA) synovitis is dominated by monocytes/macrophages with inflammatory patterns resembling microbial stimulation. In search of triggers, we reduced the intestinal microbiome in 20 RA patients (open label study DRKS00014097) by bowel cleansing and 7-day fasting (≤250 kcal/day) and performed immune monitoring and microbiome sequencing. Chitin deacetylases (CDAs) are found in many different organisms ranging from marine bacteria to fungi and insects. These enzymes catalyze the removal of acetyl groups from chitinous substrates generating various chitosans, linear copolymers consisting of N-acetylglucosamine (GlcNAc) and glucosamine.
