Climate change is causing a significant decrease in the total acidity of grapes and related wines. This represents a serious issue for sparkling wine production. Consequently, before the second fermentation, the acidification of base wines is often necessary.

Ellipsometry is extensively used in the optical regime to investigate the properties of many materials as well as to evaluate with high precision the surface roughness and thickness of thin films and multilayered systems. Due to the inherent non-coherent detection technique, data analyses in optical ellipsometry tend to be complicated and require the use of a predetermined model, therefore indirectly linking the sample properties to the measured ellipsometric parameters. The aim of this tutorial is to provide an overview of terahertz (THz) time-domain ellipsometry, which is based instead on a coherent detection approach and allows in a simple and direct way the measurement of the material response.

Control of liquid crystal (LC) orientation using a proper SiO alignment layer is essential for the optimization of vertically aligned nematic (VAN) displays. With this aim, we studied the optical anisotropy of thin SiO films by generalized ellipsometry as a function of deposition angle. The columnar SiO structure orientation measured by a noninvasive ellipsometry technique is reported for the first time, and its morphology influence on the LC alignment is demonstrated for large deposition angles.

Single-wall carbon nanotubes (SWCNT) are anisotropic nanoparticles that can cause modifications in the electrical and electro-optical properties of liquid crystals. The control of the SWCNT concentration, distribution and reorientation in such self-organized fluids allows for the possibility of tuning the liquid crystal properties. The alignment and reorientation of CNTs are studied in a system where the liquid crystal orientation effect has been isolated.

Recently important efforts have been dedicated to the realization of a new kind of photonic crystals, known as photonic quasicrystals, in which the lack of the translational symmetry is compensated by rotational symmetries not achievable by the conventional periodic crystals. Here we show a novel approach to their fabrication based on the use of a programmable Spatial Light Modulator encoding Computer-Generated Holograms. Using this single beam technique we fabricated Penrose-tiled structures possessing rotational symmetry up to 23-fold, and a two-dimensional Thue-Morse structure, which is an aperiodic structure not achievable by multiple beam holography.

Dielectric aperiodic Thue-Morse structures up to 128 layers have been fabricated by using porous silicon technology. The photonic band gap properties of Thue-Morse multilayers have been theoretically investigated by means of the transfer matrix method and the integrated density of states. The theoretical approach has been compared and discussed with the reflectivity measurements at variable angles for both the transverse electric and transverse magnetic polarizations of light.

We have studied the electro-optical and angular behavior of holographic-polymer-dispersed liquid crystal gratings at different wavelengths, in the visible and in the near-infrared range. As usual in these kinds of materials, a strong polarization dependent behavior was observed. Our samples showed very high diffraction efficiency for p-polarized radiation at 1.
