The current work illuminates the interplay between nanofibrillated cellulose (NFC) films and hydrated water. The NFC films from three sources of technological importance, i.e.

Based on the idea of defect migration as the principal mechanism in the dielectric relaxation of ice I, the concept of low-temperature dynamic crossover was proposed. It is known that at high temperatures, the diffusion of Bjerrum and ionic defects is high and their movement may be considered to be independent. Simple switching between these two mechanisms leads to a dynamic crossover at ∼235 K.

Dielectric Spectroscopy (DS) was employed to study a novel oral matrix carrier (OMC), composed from silica nano-particles, polysaccharides, biopolymers and natural oils. This composition self-orders to a multi hierarchal structure and as such is amenable to be studied by techniques such as DS. The dielectric properties were measured in the frequency range 1MHz-1GHz and a temperature range 10°C-45°C.

The LLT proposed by several authors focused mostly on explaining the anomalous properties of water in a deeply supercooled state. However, there have been no direct experimental observations yet of LLT in bulk water in the so-called 'no man's land', where water exists only in the crystalline states.
