Article Synopsis
  • Cocoa beans can produce artisanal chocolate, which is popular among consumers for its higher quality and taste.
  • This study investigated how different maturation conditions (no-oxygen environment vs. oak barrel aging) affect the chemical makeup of 80% chocolate samples.
  • A total of 35 volatile and 37 non-volatile compounds were identified through advanced analytical methods, showing that maturation significantly influences the chocolate's sensory qualities and bioactive compounds; a sensory evaluation of the chocolates is recommended next.

This integrative review aims to identify the main flavonoids present in some species of the Myrtaceae family. Studies published between 2016 and 2022 were selected, specifically those which were fully available and written in Portuguese, English, or Spanish, and which were related to the fruits araçá (), cambuí (), gabiroba (), jabuticaba (), and jambolan (). Scientific studies were gathered and selected in Google Scholar, Scielo, and Science Direct indexed databases, out of which 14 were about araçá, 7 concerned cambuí, 4 were about gabiroba, 29 were related to jabuticaba, and 33 concerned jambolan, when we observed the pre-established inclusion criteria.

Article Synopsis
  • Grumixama is a native Brazilian fruit with potential food benefits, rich in polyphenols and volatile compounds that enhance its flavor and aroma.
  • The study aimed to evaluate the effectiveness of different solid-phase microextraction (SPME) fibers in extracting volatile organic compounds from grumixama pulp and to optimize extraction conditions such as time, temperature, and sample weight.
  • The results showed that the DVB/CAR/PDMS fiber was most efficient, identifying the highest number of volatile compounds, primarily sesquiterpenes, under optimal conditions of 75 °C, 2.0 g sample weight, and 20 minutes of adsorption time.
