The present study examined the physicochemical, antioxidant, and antimicrobial properties of three medicinal plants: thyme ( Borbás ex Velen), cotton thistle ( L.), and hawthorn fruit ( Jacq.) from the Western Rhodope Mountains, Bulgaria.
