The research data on the effect of bentonite clays (BT) in the process of clarification and stabilization on the elemental composition determining the varietal affiliation of wines are analyzed in the article. The initial objects were three untreated wine samples produced from Cabernet Sauvignon, Merlot and Moldova grape varieties in the Krasnodar Territory. Clarification and stabilization of untreated wine samples was carried out with 32 samples of BT of various degrees of dispersion and trademarks.

The article presents the results of study of the effect of polyphenol-rich materials obtained from grapes on the clinical symptoms, activity of non-specific proteases, and parameters of lipid peroxidation (LPO) of blood of rats with fructose model of metabolic syndrome (MS). The purpose of the work was to assess the influence of the concentrate of red table wine Saperavi on the cultivated nerve cells exposed to glutamate. The selection of Saperavi as the source of phenolic compounds was not accidental: this type of grapes in the Krasnodar region has the highest content of them - up to 4-5 g/dm3 and more. Polyphenol concentrate was prepared by pre-distillation of ethanol using vacuum, evaporation of red table wine with a rotary vaporizer, with the subsequent lyophilic drying.

This article represented the data about antioxidant activity in the red table and liqueurfaults, prepared from the types of grapes of Cabernet, Merlot and Saperavi. The antioxidant activity of faults in the conversion to TROLOX, the synthetic analog of gallic acid, was determined by voltammetric method. The determination of antioxidant activity was conducted in the young faults (through 2 month after the completion of fermentation) and through half a year the storage without the air inlet.

Criteria for the evaluation of the plasmocoagulase activity of natural isolates and mutant strains of the causative agents of glanders and melioidosis were worked out, which made it possible to subdivide them by this sign into pathogens with high, moderate and low activity. The plasmid pTH10 was transfered by conjugation into the Pseudomonas mallei strains. An attempt to construct the donor strains using the widely known technique employing the homology between the plasmid and chromosome due to the transposon Tn1 carried by the plasmid was unsuccessful.
