Grilled beef sausage is a popular street delicacy in many countries, and Ghana is no exception. This study assessed street-vended grilled beef sausages as a potential vehicle of microorganisms that present food safety risks to the general public in Ho City. This Scientific Report addresses a mandate from the European Commission according to Article 31 of Regulation (EC) No 178/2002 on the welfare of cats and dogs in commercial breeding establishments kept for sport, hunting and companion purposes. The aim was to scrutinise recent recommendations made by the EU Platform on Animal Welfare Voluntary Initiative on measures to assist the preparation of policy options for the legal framework of commercial breeding of cats and dogs. Specifically, the main question addressed was if there is scientific evidence to support the measures for protection of cats and dogs in commercial breeding related to housing, health considerations and painful procedures.

Effects of 17 performance, carcass and raw ham quality parameters on ham weight loss at first salting in heavy pigs, a meat quality indicator for the production of high quality dry-cured hams.

Ham weight loss at first salting (HWLFS) is a meat quality parameter used to assess the suitability of the hams for salting and seasoning. The relationships between HWLFS and 17 performance, carcass and raw ham quality parameters were investigated in 260 performance tested Italian Large White heavy pigs. HWLFS was affected by slaughter day and visible intermuscular fat of trimmed hams whereas sex did not affect its variability.

Water status in meat from pig breeds strongly differing in growth performances.

This research compared the distribution and mobility of water in the longissimus thoracis muscle of 51 Apulo-Calabrese and 52 crossbred pigs differing in growth performances. The Apulo-Calabrese and crossbreed pigs were fed the same diet and slaughtered at 135 and 155 kg live weight, respectively. Besides meat quality measurement, water status was assessed from transverse relaxation time (T) weighted signals registered by Time Domain Nuclear Magnetic Resonance (TD-NMR).

The versatility of denaturing gradient gel electrophoresis (DGGE) protocol provides enough grounds for its wide application over an array of microorganisms. This work was designed to evaluate DGGE for the detection and confirmation of mycobacteria and their association, if any, with waterborne pathogens. A total of 76 samples comprising raw untreated water, schmutzdecke, floccules and final treated water obtained from a common water source, and two water treatment works (WTW1 and WTW2), were analysed.

Despite the increasing interest in the welfare of animals during transport, very little is known on the response of local pig breeds to the transport procedures. The study was conducted with the view to determine the impact of replacing fishmeal with black soldier fly larval meal (BSFLM) on growing guinea fowls. BSFLM replaced fishmeal (3% in the control diet) in the ratios of 0, 20, 40, 60, 80, and 100% to produce six dietary treatments, which were iso-caloric and iso-nitrogenous. Preweaning growth performance of west African shorthorn cattle and their Jersey crossbreds in Ghana.

Calf records on 621 West African Shorthorn (WASH) and 3 grades of Jersey x WASH crossbreds were analysed for the effects of the level of Jersey breeding and other factors on birth weight, 205-day weaning weight and average daily gain (ADG). Crossbred calves were significantly (P < 0.01) heavier at birth than purebred WASH and birth weights increased with increasing level of Jersey breeding.
