A rapid and non-invasive mass spectrometry-based electronic nose (MS-eNose) method, combined with chemometric analysis, was developed for the early detection of Aspergillus westerdijkiae on caciocavallo cheeses during ripening process. MS-eNose analyses were carried out on caciocavallo inoculated with ochratoxin A (OTA) non-producing species and artificially contaminated with A. westerdijkiae, an OTA producing species.
View Article and Find Full Text PDFand are widely distributed maize pathogens recognized as distinct species with a species-specific chemotype based on patterns of mycotoxins. Recent comparative genomic analysis revealed that genomes of both species carry a complete beauvericin () biosynthetic genes cluster, but the key gene in is not functional likely due to a large insertion (NRPS22ins) and multiple mutations (SNP298 and SNP528). We used the recently published genome sequences for these species to develop PCR markers for investigating the distribution of three main mutations in the gene in a large collection of strains of both species from around the world.

Autochthonous mycobiota colonizing cheese aging in Dossena mines, was investigated and characterized by two approaches: microbial isolations and metabarcoding. Microbial isolations and metabarcoding analysis were conducted on cheese samples, obtained by four batches, produced in four different seasons of the year, aged for 90 and 180 days, by five dairy farms.

Fifteen non-regulated mycotoxins were found in 19 food categories worldwide. On top of that, 38 different combinations of non-regulated mycotoxins were found, with mixtures varying from binary combinations up to 12 mycotoxins.
