  • Frankfurter-type sausages were made from Cinta Senese meat using two formulations: one with synthetic curing agents (NIT) and another using a natural mixture (NAT).
  • Both sausage types were safe, showing no foodborne pathogens, but differed in fat content and fatty acid efficiency, with NAT being less effective against lipid oxidation.
  • Sensory evaluations revealed that NIT sausages were lighter and redder, while NAT sausages had a yellow hue, and although NAT sausages had altered taste and odor characteristics, they offered a viable alternative to synthetic additives despite needing some improvements.

Oleuropein (Ole), a secoiridoid glucoside present in leaves, gained scientific interest thanks to its several biological properties, including the anticancer one. We verified whether Ole might potentiate the cytotoxicity of conventional drugs used to treat melanoma, disclosing a potentially new therapeutic strategy. We tested the cytotoxic action of Ole alone or in combination with chemotherapeutics on A375 human melanoma cells.

In the light of the antiparasitic properties displayed by several natural products, promastigotes were exposed to green tea () leaves extract (GTE) and pomegranate () peel extract (PPE).
