The spectra of blood fatty acids, the true diet and the immune system were explored in 40-54-aged male populations of Siberia and Chukotka. There were differences in the serum levels of omega 3, and omega 6-polyunsaturated fatty acids (PUFA) in the residents od the areas under study. The blood concentration of omega 3-PUFA was significantly higher in the Chukchi than that in Novosibirsk residents, which is associated with the fact the Chuchotka inhabitants consume sea fish and products, which are rich in eicosapentaenoic and docosahexaenic acids.

The stabilizing effect of the newly produced sulfur-containing antioxidant SO-3 on the fatty acid composition of fat obtained from Mallotus villosus was studied at various temperatures. In the absence of the antioxidant, omega-3 polyunsaturated fatty acids were found in the fish fat during 1 month at -18 degrees storage, although the content of these fatty acids was decreased 2-fold in this case. Content of several oxidized forms of cholesterol was studied in blood serum of patients with hypercholesterolemia using chromato-mass-spectrometry. The hydroxycholesterols detected were identified as 7-beta-hydroxycholesterol, 25-hydroxycholesterol, 7-ketocholesterol in the presence of standard substances added. Main patterns of gas chromatographic and mass spectrometric analyses of these substances are described.

Complete analysis of blood serum free fatty acids was carried out after methylation of the acids in the mixture containing methanol-acetyl chloride 50:1 and subsequent evaluation of their methyl esters using a gas chromatography analyser. Standard mixtures of free fatty acids and their methyl esters were analyzed before study of blood serum free fatty acids; composition of fish-liver oil (Far Eastern mackerel), containing definite fatty acids was also studied. Combination of gas chromatography and mass spectrometry enabled to identify all the free fatty acids and to detect their main characteristics (time of retention, typical mass spectrum).

Relative intensities of main resonance high-resolution 13C NMR spectra of acid hydrolysis products of bovine skin and human aortic collagens were measured. The contents of Gly, Pro, Hyp amino acid residues and Gly-Pro-Y triplets in collagen peptides was estimated. A good agreement between the experimental and theoretical data of the analysis of amino acid sequences of bovine skin collagen was shown.
